These Simple, Slow Roasted Brazil Nuts are the Perfect Healthy Snack

I don't know about you, but I love to snack in between meals. One of my go-to snacks is a handful of nuts. Not only do they contain healthy fats, they provide other health benefits too. Brazil nuts in particular are great to have on a regular basis.

Brazil nuts contain ellagic acid, which has excellent antioxidant and anti-inflammatory properties, and selenium, a mineral that is also known to combat inflammation. That said, it’s no surprise that studies have shown that eating just one Brazil nut a day can decrease oxidative stress and inflammation. 

The ellagic acid and selenium are enough to make me love Brazil nuts, but I think they're also one of the most satisfying nuts to eat. They are by far my favourite and I have a bad habit of rummaging though a bowl of mixed nuts just to find the them.

As mush as I enjoy a plain old brazil nut, they’re even tastier when they're slow roasted with olive oil and fresh herbs. A little rosemary, thyme, sea salt and pepper give them an extra kick.

So without further ado, here's a recipe that's sure to satisfy your snack craving.

Ingredients

  • 2 cups raw brazil nuts
  • ⅛ cup olive oil
  • a few sprigs of your favourite herbs such as rosemary, thyme or even curry powder
  • 1 tsp sea salt
  • ¼ tsp fresh cracked pepper 

Instructions

  1. Combine all ingredients in a bowl and spoon out onto a cookie sheet lined with parchment paper.
  2. Slow roast in the oven at 250 for about 15 minutes. Check the oven regularly. Do not overheat and burn. Take them out when they’re a light golden brown.
  3. Let cool and transfer to a large mason jar.
  4. Enjoy at least one day.
