My go-to dish for dinner is roasted root vegetables and to kick it up a notch I love to pair it with this seriously delicious pumpkin seed pesto dressing!
This skin and immune boosting mineral rich recipe will provide you with an outstanding source of zinc, silica, iron, potassium, manganese, thiamin, vitamin A, C, K, beta-carotene and ‘healthy’ fat… not to mention the fact that its low glycemic, high in fibre, dairy free, gluten free, a good source of protein and extremely tasty!
Best of all, the cilantro helps to draw out heavy metals, the parsley is a blood purifier, the turmeric helps counter inflammation and the yogurt provides a great probiotic kick..
- 1 cup cilantro leaves (not stems) packed
- 1 cup parsley leaves (not stems) packed
- ½ cup pumpkin seeds (lightly toasted)
- 1 garlic clove
- 1 tsp turmeric
- 1 tsp cumin
- ½ tsp cinnamon
- 1 tsp (fresh if possible) ginger
- 1 tsp sea salt
- ½ tsp cayenne pepper
- ¼ cup olive oil
- ¼ cup sesame seed oil
- ¼ cup walnut oil
- ¼ cup warm coconut oil
- 1 tbsp apple cider vinegar
- 3 tbsp plain yogurt (I like Yoso's coconut yogurt b/c it's non dairy)
- 1 tbsp maple syrup
- Juice of one lime
Pour the oils into a measuring cup. Combine all the other ingredients in a food processor or blender, and process on high to form a paste. Drizzle in the oil mixture and pulse to blend it in. Taste it and add more oil, salt, or spices if you so desire. Store refrigerated in a mason jar.
Oh and try not to eat it off the spoon :)
